Mama Loves To... Bake Mini Strawberry Pop Tarts
BEEP! BEEP! BEEP! The familiar sound of my alarm clock would wake me up. I’d pop out of bed, get dressed, then head to the kitchen for breakfast. I can still remember the sound of the foil crinkle, easily ripping open to reveal a pair of strawberry Pop Tarts. Served hot or cold (both equally tasty) with a large glass of milk; that was my JAM. Now imagine those perfect pieces of pastry fresh out of the oven, made from scratch...well, almost from scratch. I didn't feel like making jam, but they’re SO CLOSE to being completely from scratch! Not that it really matters, they’re delicious. All I need is a time machine to take me back and let younger me have a bite!

Main Ingredients
FOR THE POP TARTS
2 1/4 cups flour
1/4 cup granulated sugar
2 eggs yolks
1 cup butter
3/4 cup strawberry jam
FOR THE GLAZE
1 cup confectioners’ sugar
2 to 3 tablespoons milk, divided
1/4 teaspoon vanilla extract
squeeze of lemon juice
gel food coloring
assorted sprinkles
Recipe Steps
Pre-heat oven to 400F.
Combine the flour, eggs, and sugar in a bowl.
Add the butter and cut into the dry ingredients with a pastry cutter, fork, or your fingers. Continue until the mixture resembles coarse sand and the butter is the size of small peas.
Add the cold water a tablespoon at a time, mixing until the dough comes together into a ball. Divide into two and form each into a disk. Wrap in plastic wrap and chill in the fridge for at least 30 minutes.
Roll out into a large rectangle about to about 1/8th inch thick. Trim so edges are straight. Cut into 8 5x3-inch rectangles. Repeat with second disk. Gather trimmed dough scraps together and re-roll as needed.
Fill a plastic sandwich bag (or a piping bag) with the strawberry jam. Leaving about a 1/4 inch or 1/2 an inch border around the edges. Wet your finger with a little water and run it around the bare edges of the dough.
Add a top layer of pie dough and press the edges down to seal in the strawberry jam. Take a fork and press the edges sealed all the the way around the pop tart. Bake for about 10 minutes.
Remove from oven and place on a wire tray to cool. Once they're cool, start making the glaze.
To make the glaze, whisk the confectioners’ sugar with the milk until smooth. Stir in the vanilla, lemon, and gel food coloring. Spoon the glaze over the tops of the pies. Add sprinkles.
